Equipment

  • Mixing bowl

Ingredients

  • 2 tablespoons cold-pressed olive oil
  • ½ teaspoon lemon zest
  • ¼ teaspoon cracked black pepper
  • 1 whole crown of fresh broccoli
  • ½ teaspoon sea salt
  • ¼ teaspoon smoked paprika
  • ½ teaspoon granulated garlic

Instructions

Step 1: Prepare the Broccoli

  • Start by rinsing your broccoli. I always ensure it’s fresh and crispy. Cut the crown into bite-sized florets. You want them evenly sized so they cook uniformly. It’s tempting to leave the pieces large, but trust me; bite-sized is the way to go. Toss them into a mixing bowl.

Step 2: Mix the Ingredients

  • In the same bowl, add your olive oil, lemon zest, black pepper, sea salt, smoked paprika, and granulated garlic. Give it a good toss.
  • I like to use my hands for this part. It feels great to dig in and get everything coated beautifully. The aroma of the lemon zest mixed with olive oil is heavenly!

Step 3: Preheat Your Air Fryer

  • Now let’s get that air fryer preheating. Set it to 400°F (about 200°C). A hot fryer means that we'll get that crispy outside without overcooking the inside.

Step 4: Air Fry the Broccoli

  • Once your air fryer is ready, spread the broccoli mixture in a single layer in the fryer basket. Avoid overcrowding; you want some space for the air to circulate around those beautiful florets.

Step 5: Cook to Crispy Perfection

  • Air fry for about 8 to 10 minutes. I recommend shaking the basket halfway through. This little shake will help ensure you get that even crispiness we crave. Keep an eye on them towards the end; if you like them extra crispy, you might want to add a minute or two.

Step 6: Serve and Enjoy

  • When they’re done, remove the basket and let them cool for a minute. Now, here’s where you can get really creative. Drizzle a little more olive oil, a squeeze of fresh lemon juice, or some grated cheese on top!
  • Whatever tickles your fancy. Serve them hot as a side or toss them into a bowl for an amazing veggie snack.

Notes

Cold-Pressed Olive Oil: This oil retains more nutrients and gives a richer flavor than standard oils. Always opt for extra virgin when you can!
Lemon Zest: Zesting right before use ensures that you capture the aromatic oils in the rind. It adds a fresh, vibrant flavor that's truly exceptional.
Cracked Black Pepper: This spice not only adds heat but also enhances the flavor of the broccoli. Plus, it has health benefits, such as aiding digestion.
Fresh Broccoli: Broccoli loses its nutrients fairly quickly after being cut. So, choose a fresh crown and use it on the same day for the best benefits.
Sea Salt: Instead of table salt, sea salt is less processed and offers trace minerals. Use it sparingly to elevate flavors without drowning them.
Smoked Paprika: This spice adds a wonderful depth to the dish. Plus, it has antioxidants and can curry a nice warmth without being spicy.
Granulated Garlic: This ingredient gives a lovely garlicky flavor without the risk of bitterness that can come from raw garlic. It’s a must-have in any spice drawer.
