- 1 whole turkey 12–20 pounds
- 1 large yellow onion
- 1 juicy lemon sliced into quarters
- 1 crisp apple
- 0.75 oz pack of fresh rosemary sprigs
- 0.75 oz pack of fresh thyme sprigs
- 0.75 oz pack of aromatic sage leaves
- 1 small cinnamon stick
Step 1: Prepare the Herb Butter
In a medium bowl, combine the softened butter, sea salt, black pepper, minced garlic, chopped herbs, and lemon zest. Mix it all together until well combined. This herb butter can also be made a day ahead to let the flavors meld. You can store it in the refrigerator. Just remember to take it out a bit early to allow it to soften before using.
