Equipment

  • Blender
  • strainer
  • Bowl
  • Knife
  • cutting board

Ingredients

  • - 1 large bitter gourd bitter melon
  • - 1 green apple peeled and chopped
  • - 2 cm fresh ginger peeled and finely diced
  • - 1 tablespoon lemon juice adjust to taste
  • - 1 teaspoon black salt or regular salt
  • - 1 small green chili or black pepper powder for mildness
  • - 1 tablespoon honey to add a hint of sweetness
  • - Cold water as needed for blending

Instructions

Step 1: Prep the Bitter Gourd

  • First, you need to provide your bitter gourd with a nice wash. Rinse it thoroughly under running water; it deserves to be clean! Next, cut the gourd in half. Don’t forget to scoop out the seeds; those little guys aren’t meant to be part of the fun! Now, chop the gourd into small, bite-sized pieces. The smaller you cut, the easier it’ll be to extract the juice later on.

Step 2: Salt Treatment

  • Now that your bitter gourd is chopped, toss it into a mixing bowl and sprinkle the black salt over it. This step is key; gently massage the salt into the gourd with your hands. It helps to draw out some of its natural bitterness and moisture. Set this bowl aside for about 10 to 15 minutes and let the salt work its magic.

Step 3: Get Chopping

  • While the gourd is resting, grab your green apple. After removing the seeds, chop it up (no need to peel—let’s keep that extra fiber!). Set these apple pieces aside for now; we’ll introduce them to the bitter melon magic soon.

Step 4: Squeeze the Gourd

  • After the waiting game, it’s time to give your bitter gourd a squeeze. With clean hands, take the salted gourd pieces and apply a little pressure to release the juices into the bowl. Discard the squeezed pieces afterward—you want just the liquid.

Step 5: Blend It Up

  • Now, in your trusty blender, toss in the squeezed bitter gourd, chopped apple, ginger, green chili, and a splash of cold water. Blend everything until it’s a smooth concoction. Feel free to add ice cubes if you prefer a chilled drink!

Step 6: Strain for Purity

  • Next up, strain your blended juice using a fine mesh sieve or cheesecloth. This will give you a smooth and luscious drink, free of pulp. Extract as much liquid as you can—no sense in wasting those vitamins!

Step 7: Season to Taste

  • Return the strained juice to your blender or a separate bowl. Add the fresh lemon juice and perhaps a touch more salt if you feel it’s needed. Mix everything well and add more cold water if the consistency is too thick.

Step 8: Serve

  • Pour your beautiful, vibrant green juice into glasses. Serve it over ice for a refreshing blast. And there you go—a perfect drink to sip on while lounging in the sun!

Notes

- Start Off Slow: If you’re new to bitter melon, consider beginning with less of it and gradually increase its amount in future recipes.
- Balance the Flavors: If the juice is too bitter for your taste, adjust the apple and honey quantities to sweeten it up.
- Experiment with Spice: Want a kick? Add more chili or  a dash of cayenne to really wake things up!
- Quality Ingredients Matter: Use high-quality ginger and lemons; they elevate every sip.
- Chill Out: Keeping your ingredients cold can help maintain that refreshing taste. This drink is best enjoyed chilled!
