When I think of breakfast, my mind races to images of sizzling bacon, fluffy eggs, and the tantalizing aroma of freshly cooked tortillas. If you’re like me, you know that breakfast is the meal that sets the tone for the day.

Ingredients
  

  • ½ ripe avocado diced small
  • 4 slices thick-cut bacon
  • ½ cup sharp cheddar cheese shredded
  • 2 tablespoons freshly chopped cilantro leaves
  • 4 large farm-fresh eggs
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon cold-pressed extra virgin olive oil
  • 4 soft flour tortillas
  • 2 green onions finely sliced (separate green and white parts)
  • 2 tablespoons sour cream or Greek yogurt optional, for extra creaminess and tang

Instructions
 

Step 1: Cook the Bacon

  • Start by frying the bacon in a skillet over medium heat. Cook it until it’s crispy, which usually takes about 6-8 minutes. Once done, remove the bacon and let it drain on a paper towel. Remember to reserve a tablespoon of the bacon fat; it adds great flavor to the eggs!

Step 2: Scramble the Eggs

  • In the same skillet, add the bacon fat back to the pan. Beat the eggs in a bowl and pour them into the skillet. Cook the eggs on medium-low heat, stirring gently until they’re fluffy and just set. Don’t forget to season the eggs with salt and pepper.

Step 3: Warm the Tortillas

  • While the eggs are cooking, warm the tortillas. You can do this directly over a flame on your gas stove for a few seconds on each side or in a dry skillet. Just make sure they’re pliable and slightly toasted.

Step 4: Assemble the Tacos

  • Now, it's go-time! Place a warm tortilla on a plate. Spoon a generous amount of scrambled eggs onto it. Crumble the bacon on top, followed by shredded cheddar cheese, diced avocado, and green onions. For an added hit of flavor, sprinkle fresh cilantro and a dollop of sour cream or Greek yogurt if you wish.

Step 5: Enjoy!

  • Fold the taco and take a big bite. Feel free to customize each taco as you go. Maybe a little extra cheese today? Or some hot sauce for a kick? The possibilities are endless.

Notes

  • Bacon Options: If you’re not a fan of bacon, consider turkey bacon or even sausage. You can sauté them in the same pan for that extra flavor.  
  • Egg Alternatives: Try using egg whites or a plant-based alternative for a healthier option. Just make sure to adjust the seasoning.  
  • Garnishes: Fresh herbs can elevate the flavor profile. Try adding parsley, chives, or even a sprinkle of crumbled feta cheese for an unexpected twist.  
  • Meal Prep: Prepare the eggs, bacon, and veggies the night before. Store them in separate containers so you can grab and go in the morning.  
  • Spice It Up: If you enjoy a little heat, toss in some jalapeños or sprinkle your favorite hot sauce on top.
