  • 2 Soft Burger Buns
  • 15 oz. Canned Black Beans drained and rinsed
  • 1 Red Bell Pepper finely diced
  • 1 Yellow Onion finely chopped
  • 1 Large Organic Egg lightly beaten
  • 1/2 cup Fresh Cilantro chopped
  • 1 tbsp. Freshly Minced Garlic
  • 1/2 cup Panko Breadcrumbs
  • 1/2 cup Grated Parmesan or Pecorino Romano Cheese
  • 2 Slices Provolone Cheese cut to fit bun
  • Burger Seasonings:
  • 1 tsp. Dried Oregano
  • 1/2 tsp. Freshly Ground Black Pepper
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Sweet Paprika
  • 1/2 tsp. Ground Chili Powder
  • 1/4 tsp. All-Purpose Adobo Seasoning
  • 1/4 tsp. Crushed Red Pepper Flakes
  • Pinch of Ground Cayenne Pepper
  • Avocado Sauce:
  • 1 Medium Ripe Avocado mashed
  • 1/4 cup Mayonnaise or Greek Yogurt for a lighter option
  • 1 tsp. Fresh Lemon Juice
  • 1 tbsp. Chopped Parsley
  • 1/2 tsp. Fresh Minced Garlic
  • 1/2 tsp. Freshly Ground Black Pepper
  • 1/4 tsp. Himalayan Pink Salt
  • 1 tsp. Ground Cumin
  • 1 tbsp. Lime Juice

Instructions
 

  • Start with those beans. Take the canned black beans and rinse them under cold water. This helps remove excess sodium. Once rinsed, mash them roughly in a bowl. You want some whole beans for texture, so don’t overdo it!
  • Heat a skillet over medium heat. Add a splash of oil, then toss in the chopped onion and red bell pepper. Sauté until the onion turns translucent and the peppers soften.
  • This usually takes about 5 minutes but feel free to let them relish in the heat. The aroma will have you dreaming of summer cookouts.
  • In the same bowl as your mashed beans, add the sautéed veggies. Then, pour in the beaten egg, cilantro, garlic, panko breadcrumbs, Parmesan, and all the seasoning. Mix it thoroughly. You want the flavors to mingle nicely.
  • Now it’s time to form those patties. Take a handful of the mixture and shape it into a burger patty. Aim for about 1-inch thick. Once shaped, you can also place the patties in the refrigerator for a bit. This helps them hold together better when cooking.
  • Heat a couple of tablespoons of oil in a skillet over medium-high heat. Add the patties gently, cooking for about 4-5 minutes on each side. You want a delightful golden crust to form.
  • Once cooked, it’s time to assemble! Place a patty on each burger bun. Top with provolone cheese. Let it melt just a bit, then slather that creamy avocado sauce on top. Goodness, that sounds divine!

Notes

  • Chill the Mixture: If the mixture feels too loose, refrigerate it for 30 minutes. This helps with shaping.
  • Avoid Overcooking: Keep an eye while frying. You want it golden, not burnt!
  • Experiment with Spices: Don’t hesitate to adjust the seasoning to your taste. Maybe you like it spicier?
  • Double the Batch: Make extra patties and freeze them. Perfect for busy weeknights!
