Equipment

  • Large bowl

Ingredients

  • 2 pounds chicken wings
  • Vegetable oil for frying
  • 4 tablespoons unsalted butter
  • 1 ½ cups Frank's Red Hot Sauce
  • 1 ½ teaspoons garlic paste
  • 1 tablespoon apple cider vinegar adds a touch of tanginess
  • 1 teaspoon granulated white sugar
  • ¾ teaspoon ground cayenne pepper
  • ½ teaspoon freshly cracked black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 egg yolk
  • 1 cup ranch or blue cheese dressing for dipping
  • 1 teaspoon smoked paprika for an extra smoky flavor

Instructions

Step 1: Preparing the Chips

  • Start by deciding whether to use store-bought tortilla chips or to make them from scratch. If making from scratch, cut corn tortillas into wedges, fry them in vegetable oil until golden, and drain on paper towels. Sprinkle it with salt immediately.

Step 2: Cutting the Vegetables

  • Chop the tomatoes, onion, and jalapeño into small pieces. A good dice keeps the texture consistent. If you love the heat, keep the seeds in the jalapeño; otherwise, remove them for a milder salsa.

Step 3: Merging Ingredients

  • In a medium bowl, combine the diced tomatoes, onions, jalapeño, and chopped cilantro. Squeeze fresh lime juice over the mixture. Start with half a lime and add more based on taste. Season the entire mixture with a pinch of salt.

Step 4: Mixing

  • Gently stir everything together. Give it a taste. Adjust the salt, lime juice, or even add a dash of cumin for added depth.

Step 5: Letting it Chill

  • Let the salsa sit for at least 15 minutes. This allows the flavors to meld together beautifully.

Notes

  • Use Fresh Ingredients: Fresh produce makes a difference. Ripe tomatoes and fragrant cilantro will elevate your salsa.
  • Adjust the Heat: If you're unsure about spice levels, start small. You can always add more heat as needed.
  • Homemade Chips: If you have the time, making chips from fresh corn tortillas can take your dish up a notch.
  • Chill: Allow the salsa to chill. Serving it cold enhances the taste and texture.
  • Experiment: Don’t be afraid to add ingredients like mango or pineapple for a sweet twist!
