Start by melting the butter in a pan over medium heat. Add in the Frank's RedHot sauce, garlic purée, sugar, cayenne pepper, black pepper, Worcestershire sauce, and the egg yolk. Stir these together well. You'll want the mixture to simmer gently while keeping an eye on it. You don’t want the egg to scramble. Allow it to thicken slightly, which should take about 5-7 minutes.
In a mixing bowl, combine your shredded rotisserie chicken with the homemade buffalo sauce. Make sure to coat the chicken evenly so every piece has that spicy zing.
While the chicken is absorbing those wonderful flavors, preheat your oven according to the instructions on the package of tater tots. In a separate bowl, toss the frozen tater tots with olive oil and your selection of spices (smoked paprika, cayenne pepper, chili powder, mustard powder, ground white pepper, and salt). This additional layer of seasoning makes the tots exciting on their own.
Spread your seasoned tater tots onto a baking sheet in a single layer. Bake according to the package instructions, usually around 25 minutes, until they’re golden and crispy. Flip them halfway through to ensure even cooking.
Once the tater tots are cooked, take them out of the oven and layer the buffalo chicken mix on top. Crumble that blue cheese over everything. If you like a bit of heat, add thinly sliced Fresno chili peppers at this stage.
Pop the assembled tater tots back into the oven for about 5 minutes. This allows the cheese to melt beautifully. When ready, take them out and drizzle with ranch or blue cheese dressing, and sprinkle chopped green onions on top. Perfectly served hot!
