Equipment

  • Oven

Ingredients

  • 1 ½ cups shredded or finely diced rotisserie chicken
  • 8- ounce block cream cheese softened to room temperature
  • ½ cup sour cream
  • 1- ounce packet Hidden Valley Original Ranch dressing mix
  • ½ cup hot sauce adjust to taste, such as Frank's RedHot
  • ½ cup sharp cheddar cheese shredded
  • ½ cup crumbled blue cheese plus extra for garnish
  • 2 green onions finely diced
  • 1 tablespoon mayonnaise optional, for added creaminess
  • ¼ teaspoon smoked paprika optional, for a smoky flavor boost

Instructions

  • Start by taking that shredded chicken. In a medium bowl, combine it with the softened cream cheese, sour cream, and ranch dressing mix.
  • Next, pour in the hot sauce. Mix well until everything is combined smoothly. For those that love heat, feel free to add more.
  • Preheat your oven to 350°F (175°C). On a large baking sheet, spread out a generous layer of tortilla chips.
  • Spoon dollops of the chicken mixture over the chips. Make sure to cover them well so that every chip gets a bit of the creamy goodness.
  • Now, sprinkle sharp cheddar cheese and crumbled blue cheese evenly over the top.
  • Slide your nachos into the preheated oven. Bake for about 15-20 minutes, or until the cheese is bubbly and golden.
  • Once out of the oven, top with sliced green onions and extra blue cheese if desired. Serve hot and watch them disappear!

Notes

  • Use Quality Chips: Choose sturdy tortilla chips that can hold up to the toppings. No one wants a soggy chip!
  • Layer Wisely: For the best experience, layer toppings. Don’t just plop everything on top—create layers for depth of flavor.
  • Mix and Match Sauces: Explore different hot sauces. Sriracha or barbecue sauce can add a unique twist.
  • Preheat Your Dish: If possible, warm your serving platter. This keeps the nachos hot longer as you serve.
  • Garnish Generously: Take the final step seriously. Fresh herbs or a sprinkle of cilantro can elevate your nachos.
