Equipment

  • Refrigerator

Ingredients

  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 2 2- inch thick filet mignon cuts
  • Freshly ground salt & black pepper to taste
  • 1/4 cup unsalted butter 1/2 stick

Instructions

Step 1: Prepare the Steak

  • Begin by taking your filet mignon out of the refrigerator. Allow it to sit at room temperature for about 30 minutes. This will ensure even cooking.

Step 2: Season Generously

  • Pat the steaks dry with paper towels. This step is crucial. Then, rub them all over with olive oil, and sprinkle generously with salt and freshly cracked pepper.

Step 3: Preheat Your Skillet

  • Heat a cast-iron skillet over medium-high heat. Give it a few minutes to get hot—this is where the magic happens!

Step 4: Sear the Steak

  • Add the seasoned filet mignon to the skillet. Sear for about four minutes. Don't touch them during this time! Flip them only when a beautiful brown crust forms.

Step 5: Add Garlic and Butter

  • Once flipped, add the minced garlic and unsalted butter to the skillet. As the butter melts, use a spoon to baste the steaks with this flavor bomb. It can be done for about another four minutes.

Step 6: Check for Doneness

  • Use a meat thermometer to check for doneness. For medium-rare, aim for about 130°F. Adjust cooking time based on your desired doneness and thickness of the steak.

Step 7: Let Them Rest

  • Remove the filet mignon from the skillet and place them on a cutting board. Cover it loosely with aluminum foil and let it rest for at least five minutes. This allows juices to redistribute, keeping your steak juicy.

Step 8: Slice and Serve

  • Slice your filet mignon against the grain, serve with your chosen sides, and bask in the praise!

Notes

  • Choice of Meat: Always choose high-quality filets. The better the meat, the better the dish will turn out.
  • Don’t Overcrowd the Pan: If you're cooking more than two steaks, use another skillet. This ensures proper searing.
  • Let It Rest: Never skip resting the meat. Patience here pays off!
  • Use a Meat Thermometer: Cooking times can vary based on thickness and heat. A thermometer takes guessing out of the equation.
  • Flavors on Top: Experiment with adding herbs like thyme or rosemary for a flavor boost.
