Ingredients
  

  • 1 small yellow onion finely diced
  • 6 slices bacon chopped into 1-inch pieces
  • 1 teaspoon apple cider vinegar for a subtle tang
  • 1 medium head green cabbage thinly sliced and chopped
  • 2 tablespoons whole grain mustard or you can use Dijon mustard
  • 3 garlic cloves finely minced
  • ¼ teaspoon smoked sweet paprika
  • Kosher salt and freshly ground black pepper to taste

Step 1: Sauté the Bacon

  • In a large skillet, over medium heat, add the chopped bacon. Sauté until crispy. This should take about 5 to 7 minutes. The goal here is to render some lovely fat, which will infuse the cabbage with flavor.

Step 2: Sauté the Onion and Garlic

  • Once the bacon is crispy, add the diced onion to the skillet. Cook for about 3 minutes until translucent. Follow up by adding the minced garlic. Allow it to sauté for an additional minute. You want that delicious aroma wafting through your kitchen.

Step 3: Prepare the Cabbage

  • Add the sliced cabbage to the skillet. Stir well to combine with the bacon, onion, and garlic. Let it cook down for about 10-12 minutes. Stir occasionally, ensuring that the cabbage is coated in the bacon fat.

Step 4: Season

  • Stir in the apple cider vinegar, whole grain mustard, and smoked paprika. Mix well. Sprinkle some kosher salt and freshly ground black pepper to taste. Taste and adjust the seasoning as needed.

Step 5: Serve

  • Once your cabbage is tender yet retains some crunch, take it off the heat. Serve immediately! You can garnish with a sprinkle of more black pepper if you like.
