  • 2 pounds sweet potatoes about 3 medium-large; I recommend Red Garnet or Jewel varieties, peeled and diced into ½-inch cubes
  • 1 tablespoon packed light brown sugar
  • 2 tablespoons melted unrefined coconut oil
  • ½ teaspoon ground cinnamon
  • ¾ teaspoon fine sea salt reduce if using iodized table salt

For seasoned roasted sweet potatoes:

  • ½ teaspoon garlic powder
  • 2 tablespoons extra virgin olive oil
  • ¾ teaspoon fine sea salt adjust for table salt
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon mild chili powder

Instructions
 

Step 1: Preheat Your Oven

  • Start by preheating your oven to 425°F (220°C). This temperature will help caramelize the sweet potatoes beautifully.

Step 2: Prepare the Sweet Potatoes

  • Peel the sweet potatoes and cut them into ½-inch cubes. Uniform size ensures even cooking, so take your time here.

Step 3: Seasoning Time

  • In a large bowl, mix together the melted coconut oil, brown sugar, cinnamon, and sea salt. Toss the diced sweet potatoes in this mixture until they are evenly coated.

Step 4: Bake

  • Spread the sweet potatoes in a single layer on a baking sheet. If you can, line the sheet with parchment paper for easier cleanup. Bake for about 25-30 minutes, flipping them halfway through, until they become golden and crispy.

Step 5: Serve

  • Once they're done, let them cool for a couple of minutes. You can serve them as a side dish or toss them in salads. They pair wonderfully with leafy greens and can even be added to grain bowls for a nutritious boost.
