Ingredients
  

  • Homemade simple syrup 1 cup water, 1 cup sugar, 225 ml
  • Juice from 6-8 lemons 1 cup, 225 ml
  • Puree from 2-3 ripe mangoes 1 cup, 225 ml
  • Chilled unsweetened coconut milk 1 cup, 225 ml
  • 500 ml chilled water 2 cups
  • A dash of sea salt
  • Crushed ice
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons fresh mint leaves finely chopped

Instructions
 

  • Combine 1 cup of water and 1 cup of sugar in a small saucepan. Heat over medium until the sugar dissolves completely. Allow it to cool.
  • Using a citrus juicer, squeeze the juice from about 6 to 8 lemons until you get around 1 cup of juice. Strain to remove seeds and pulp if you prefer a smoother drink.
  • Peel, pit, and chop the ripe mangoes. Blend them until smooth in a blender or food processor. You should aim for approximately 1 cup of puree.
  • In a large pitcher, combine the cooled simple syrup, lemon juice, mango puree, coconut milk, and chilled water. Stir well to incorporate all the elements.
  • Gently fold in the freshly grated ginger and chopped mint. These ingredients will provide that lively kick and aromatic freshness.
  • Fill glasses with crushed ice. Pour the coconut mango lemonade over the ice and garnish with extra mint leaves or thin slices of lemon for presentation.

  • Quality Counts: Use ripe mangoes for the best flavor. They should be firm yet slightly soft when gently pressed.
  • Sweetness Level: Adjust the simple syrup according to your preference. Start with less; you can always add more!
  • Make-Ahead: This lemonade can be made one day in advance. Just store it in the fridge, but keep the mint out until serving to prevent wilting.
  • Add Fizz: For an effervescent twist, substitute half the water with sparkling water.
