  • 1 tablespoon 15 grams Dijon mustard

  • teaspoon ground cayenne pepper
  • ½ teaspoon 2 grams smoked paprika
  • teaspoon fine sea salt
  • 2 tablespoons 28 grams salted butter, softened
  • 4 soft hamburger rolls
  • ½ teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 pound 454 grams cold grass-fed ground beef (straight from the fridge)
  • 4 thick slices 80 grams American cheese
  • 8 slices ripe plum tomato
  • 4 leaves green leaf lettuce
  • 2 teaspoons 10 grams minced fresh garlic

Instructions
 

  • In a mixing bowl, combine the mayonnaise, Dijon mustard, ketchup, pickle brine, cayenne, smoked paprika, and salt. Stir thoroughly until smooth. Cover it and set aside. This allows the flavors to meld beautifully.
  • Take the cold ground beef and divide it into four equal portions, about 4 ounces each. Do not over-handle; you want to keep the beef light and airy. Form each portion into a loose ball—don’t press too hard!
  • Sprinkle the formed beef balls with salt and pepper. You can be generous here. This is your chance to flavor the meat before it hits the pan.
  • Grab a heavy-bottomed skillet or griddle and place it over medium-high heat. Add the butter and let it melt. This creates a golden base and enhances flavor.
  • Once the butter has melted and is bubbling, add the beef balls to the pan. Here’s the fun part: take a spatula and press down hard on each ball. Smash it until it’s about ½ inch thick. Let the beef sizzle for 2-3 minutes.
  • Flip each patty carefully—season the other side. Add a slice of American cheese on top and cover the pan. Let it cook for an additional 2-3 minutes. The cheese should melt beautifully.
  • While the patties are finishing, toast the hamburger rolls in another pan or alongside the burgers until golden. This step adds an amazing crunch that will make your burger unforgettable.
  • On the bottom half of each toasted bun, spread your delicious sauce, then add the patty with melted cheese. Layer on the lettuce and tomato, followed by the top bun. Voilà!
