  • ½ cup freshly grated Pecorino Romano cheese

  • ½ cup finely minced flat-leaf parsley plus extra for garnish
  • 2 garlic cloves finely minced
  • ½ cup Japanese-style panko crumbs
  • 1 tablespoon finely diced shallot
  • Zest of ½ lemon
  • ¼ teaspoon fine sea salt plus extra for finishing
  • Freshly cracked black pepper to taste
  • Pinch of crushed red pepper flakes optional for a kick

Instructions
 

Step 1: Preheat Your Oven

  • Start by preheating your oven to 375°F (190°C). Having your oven hot ensures that your mushrooms cook evenly and attain a lovely golden brown color.

Step 2: Prepare the Mushroom Caps

  • Gently clean the mushrooms with a damp paper towel. Remove the stems, being careful not to break the caps. Finely chop the stems and set them aside.

Step 3: Make the Filling

  • In a skillet over medium heat, drizzle a bit of olive oil. Add the chopped mushroom stems and shallots. Sauté for about 3-4 minutes until they soften and the mixture becomes fragrant.
  • Next, add the minced garlic and sun-dried tomatoes. Cook for an additional 2 minutes, stirring to combine everything well.
  • In a mixing bowl, combine the sautéed mixture with panko crumbs, grated Pecorino Romano cheese, minced parsley, lemon zest, salt, and pepper. Mix until fully combined.

Step 4: Stuff the Mushroom Caps

  • Grab the mushroom caps and fill each one generously with the stuffing mixture. Use a spoon to mound the filling slightly above the edges. Place the stuffed mushrooms on a baking sheet lined with parchment paper.

Step 5: Bake

  • Drizzle the tops of the stuffed mushrooms lightly with olive oil to enhance browning. Bake in the preheated oven for about 20-25 minutes until golden brown and the mushrooms are tender.
